Hot Caraway drink

This is traditional Syrian drink which is served in Damascus to guests when a woman delivers a baby to celebrate her birthing. But caraway seeds are actually good for nursing mothers too (to produce more breastmilk)… I think this has been known since these ancient times.

You will need: 1 cup Caraway seeds ground into powder, 1 cup brown rice flour, 5 cups water, natural sweetener to taste (like fruit molasses or maple syrup) dry fine coconut shavings,  nuts :  almond, pistachio and hazelnut. – all nuts must be thinly cut

How to:

Let the water boil with lid on pot.. after  it boils you turn the heat to low, you put the brown rice then the caraway and leave it for 15 minutes.. but just two or three minutes before you turn the heat off, put the molasses..  if the molasses you are using has a sour taste that u don’t want to taste (like grape molasses) then maybe u will need to leave it for 5 minutes or put it from beginning with the caraway and rice.

After u turn the heat off you poor the thick drink into a bowl and “drink” it with a teaspoon.. (like soup or pudding). It is always served hot.. with the pieces of nuts and coconut shavings on top.. first the coconut shavings, then some nuts..

Licorice root drink

This one is traditional of Syria also. It is served on Ramadan month and it is a naturally sweet drink that has some fizz to it too.. it is very unique because it  has that dry taste, but it is in fact consumed on Ramadan because it quenches thirst fast. (although food fasting is beneficial, True Fasting is something one does on so many levels every single day not just one month a year, to watch our thoughts and choose our actions and our food and our words and our “habits”)

This is how licorice root drink is made: you will need:  200 grams of licorice root pieces, 10 cups water, and one teaspoon sodium bicarbonate (baking soda).

You put the pieces of licorice into a strong blender and ground them into fine shavings..  then you  put them in a piece of cloth and you sprinkle the teaspoon of baking soda on topa, then you tie up the piece of cloth together from all extremities  like a closed bag. (it should be tied up very well).

Then you put this piece of cloth full of licorice in a big bowl and you poor the cups of water on top of it. Leave it soaking in this water overnight. In the morning, leave it for a couple more hours while moving it every 15 minutes or so in the water..  after this you take out the piece of cloth while it is still tied .. you can throw away the licorice wooden parts remaining.. and you can consume the licorice drink that has resulted. Usually is drinked chilled in summertime.
